Ingredients

2 1/4 tsp active dry yeast (1 packet)
2 1/4 cups warm water
1/4 cup sugar
1 tbsp salt
2 tbsp oil
5 1/2 - 6 1/2 cups flour
butter for topping (optional)
Instructions
In a large bowl or the bowl of a stand mixer, dissolve the yeast in the warm water with a pinch of sugar. When the yeast is bubbly and foamy, add the sugar, salt, oil, and 4 cups flour, and mix until smooth.

Add remaining flour, ½ cup at a time, to form a soft, smooth dough. The dough should stick just slightly to your finger when touched, but not be overly sticky. Knead 5-7 minutes, until smooth, then roll into a ball.
Place the dough in an oiled bowl, turn over once to coat the top with oil and cover with plastic wrap. Let rise one hour, or until doubled.
When the dough has risen, punch it down gently and divide in half. Roll each half of the dough into a long rectangle about 8 inches wide. Roll the dough up, starting at the short edge, to form a cylinder that is approximately 8 inches wide. Repeat with remaining dough.

Saltine Cracker Toffee A.K.A. Christmas Crack


Ingredients

1 sleeve saltine crackers (about 40 crackers)
1 cup butter
1 cup brown sugar
2 cups semi-sweet chocolate chips
1 cup walnuts, chopped
Instructions
Line a cookie sheet with foil and spray with non-stick cooking spray.
 Arrange saltine crackers in a single layer on cookie sheet.
In a saucepan over medium heat, combine butter and sugar and bring to a boil. Continue to boil for about 3 to 5 minutes or until foamy.
Pour the sugar mixture over the layer of saltines. Using a spatula, spread to fully coat saltines.

Easy Lo Mein


INGREDIENTS:

8 ounces lo mein egg noodles*
1 tablespoon olive oil
2 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 red bell pepper, julienned
1 carrot, julienned
1/2 cup snow peas
3 cups baby spinach
FOR THE SAUCE
2 tablespoons reduced sodium soy sauce, or more, to taste
2 teaspoons sugar

1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/2 teaspoon Sriracha, or more, to taste

DIRECTIONS:
In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside.
In a large pot of boiling water, cook noodles according to package instructions; drain well.
Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes.

ZUCCHINI PASTA WITH LEMON GARLIC SHRIMP




INGREDIENTS
US Customary - Metric

4 medium zucchini
1.5 lb approx 30 raw shrimp, peeled and deveined
2 tbsp olive oil
4 garlic cloves, finely chopped
2 tbsp butter or ghee
1 lemon, juice and zest
1/4 cup white wine, or chicken broth
1/4 cup chopped parsley
pinch of red pepper flakes
salt and pepper, to taste
INSTRUCTIONS
Wash and cut the ends of the zucchini. Using a spiralizer, make the zucchini pasta. Then, set aside.
Heat the oil in a large pan over medium-high heat. Add the shrimp in one flat layer and sprinkle with salt and pepper. Cook for one minute without stirring, so the bottom side gets a little crispy.
